Pepper. Freshly ground. A few cracks on each side.

Chicken stock. 400 ml. Homemade is nicer but honestly store-bought works. Robust matters — no weak broth.

Dry white wine. 125 ml. Something you’d drink. Not vinegar in a bottle. Vermouth works. Grape juice with a splash of white vinegar if you’re really out. Not ideal but it’s there.

Butter. 30 g to start, another 25-30 g at the end for the sauce. Cold. The cold butter finishes it. Makes it shine.

How to Make a Roasting Chicken in the Oven

Dissolve the salt and syrup in 2 liters cold water. Stir until the salt mostly disappears. Submerge the chicken breast side down. The brine covers everything better this way. Refrigerate for 50 to 65 minutes. This is the bridge between raw and ready to roast.

Remove it. Pat it totally dry. Kitchen towels work. Paper towels shred. Pat under the skin too if you can get in there without tearing anything. The drier it is, the crispier the skin gets later. Non-negotiable.

If you have time — two to four hours in the fridge on a rack, uncovered — do it. The skin dries further. Skin gets even crunchier. Skip this if you’re moving fast. It still works.

Crank the oven to 240°C. Another 28 to 30 minutes. Watch the skin. It should bubble and turn golden. Butter and rendered chicken fat doing the work. If it looks dry or darkening too fast, drape foil loosely over it. Drape, not seal. Air still moves.

Pull the chicken out. Lift it with tongs so all the juices in the cavity drain back into the pan. Turn it breast side down. This is the crucial flip. The underside needs color too.

Back in for 12 to 18 minutes. You’re hunting for deep golden, not charred. The legs should move loose at the joints. Juices run clear when you pierce the thickest part. Temperature near 75°C in the thickest thigh. But feel it too. Touch the thickest part — it should feel springy but tight. Not jiggly. That’s the cue.

Remove the pan. Let the chicken sit on the counter breast side up, loosely covered with foil. Six to eight minutes minimum. This is resting. Juices redistribute. The meat stops being dry. You carve into it and it’s still warm but not still cooking.

The brine is optional if you’re crunched. Skip it and salt the skin heavily instead. Then dry it forever. Results in less juicy meat but skin still crisps. Not the same. But it works.

Fennel swaps for celery. Celery’s crunch doesn’t survive roasting anyway. Fennel adds subtle licorice. Better thing.

Wine sub: vermouth, or white grape juice with a splash of white vinegar. Don’t skip acid. Acid matters. It cuts the richness.

Roasted vegetables in the pan go dark and bitter usually. Eat them if they’re not too black. Or toss them. They served their purpose. Aromatics released. Pan stayed clean.

Pour off excess fat from the pan after the chicken comes out, but keep the brown bits. Those bits are flavor. Scrape wine into the pan. The sizzle should be audible. Add broth and thyme. Simmer about eight to ten minutes until the liquid reduces by half. It coats a spoon now. Add cold butter off heat. Whisk it until it’s glossy. Season with pepper. Frequently Asked Questions About Roasting Chicken Recipe

Can I brine the chicken overnight? Yeah. Forty-eight hours is probably the max before it gets too salty. Fifty to sixty-five minutes is the sweet spot though. Overnight is fine if you’re planning ahead. Won’t ruin it.
