Country bread. Seven cups of cubes. Stale bread works better than fresh. Fresh bread gets mushy. A day or two old is perfect. If you only have fresh, throw it in the oven at 200°F for ten minutes first.
White balsamic vinegar. Two tablespoons. Not regular balsamic — it’s darker and hides the color of everything. White balsamic stays clear. You can see the salad.
Honey. A tablespoon and a third. Balances the vinegar. Sounds small but it changes everything.
White beans. One can. Cannellini beans. Rinsed and drained. Frozen works if you thaw them. Canned is fine.
Arugula. Five cups. Or whatever you call it where you are — rocket, maybe. It’s the peppery green that shows up in everything Italian.
Fresh thyme. A tablespoon of the leaves. Don’t use dried. It tastes like dust.
Salt and pepper. The kind you use every day.

How to Make Italian Panzanella Recipe
Oven goes to 215°C — 420°F if you’re using Fahrenheit. Two sheet pans. Pancetta on one, spread out so pieces don’t touch. Tomatoes on the other, cut side down if they’re halved, whole if they’re small grapes. Salt the tomatoes lightly. Both pans in at the same time.
22 minutes and you’re watching for pancetta to stop curling and tomatoes to collapse into themselves. Tomatoes should look wrinkled. Collapsed. Pancetta should be actually crispy — not just cooked, but snapping crispy. Pull both out and let them cool for a few minutes.
Rough chop the pancetta while it’s warm. It breaks easier than when it’s cooled completely.
Large skillet over medium-high heat. Pour in three tablespoons of the olive oil. Crush one clove of garlic with the flat side of your knife — don’t mince it, just flatten it. Let it sit in that hot oil until it turns the color of honey. You’ll smell it immediately. Maybe a minute. Two at most.
Bread cubes go in now. Toss them around. They’ll start grabbing the oil and the garlic flavor. Keep stirring for maybe five minutes until they’re actually golden on most sides. Not every side — you can’t rotate bread forever. Most sides. If they start looking dry, add another half tablespoon of oil. They shouldn’t stick to the pan.

How to Get Panzanella Crispy and Actually Good
This is where the dressing happens. Big bowl. Mince that second clove of garlic finely — small pieces this time. Mix it with the white balsamic vinegar, honey, and remaining two tablespoons of olive oil. Whisk it or just stir until the honey dissolves. It should taste sharp and sweet at the same time.
Roasted tomatoes go in. The juices too — scrape them off the pan. White beans. Fresh thyme leaves stripped from the stems. Salt and pepper. Go easy on the salt if the pancetta was salty. Taste it.
Let this sit for five minutes. The flavors start talking to each other. Actually blend. Not just separate ingredients.
Right before you eat it — and this is important — fold in the arugula, the pancetta, and the bread cubes. If you do this too early the arugula wilts and the bread gets soggy in a bad way. Cold salad you want to fold it in maybe two minutes before serving. Room temp salad, you can be a little looser with the timing but still, not way ahead.

The bread type matters more than people think. Rustic bread. Sourdough works. Focaccia is too oily. Sandwich bread is too soft. You want something with actual structure. The kind of bread that has a crust.
Cold from the fridge works but it’s better at room temperature. The flavors are louder when nothing’s cold.
Don’t make it hours ahead. The bread will keep absorbing dressing and turning into mush by the time you eat it. Fresh assembly, or like maybe two hours max. Overnight and it’s a different dish entirely — not bad, just different. Mushier. More soup-adjacent.
The tomatoes need actual ripeness. Mealy tomatoes in summer are real and they suck here. They fall apart immediately and make everything watery. Use good tomatoes.
Pancetta goes crispy then sits in the warm salad. Some of it will soften back up. That’s fine. You’re going for texture variety. Some pieces stay snappy, some pieces get chewy.

- 6 slices pancetta
- 480 g (3 1/2 cups) grape tomatoes
- 2 cloves garlic peeled
- 75 ml (5 c. tbsp) olive oil
- 200 g (7 cups) country bread cut into cubes
- 25 ml (2 tbsp) white balsamic vinegar
- 20 ml (1 1/3 tbsp) honey
- 1 can 400 ml (14 oz) white beans rinsed drained
- 120 g (5 cups) arugula
- Fresh thyme leaves 1 tbsp
- Ricotta cheese optional
- Salt and pepper
- 1 Start: oven at 215°C (420°F). Two pans lined parchment paper. Pancetta slices on one; grape tomatoes spread on the other.
- 2 Roast both pans simultaneously 22 minutes till pancetta crispy and tomatoes soft, wrinkled. Cool briefly. Rough chop pancetta.
- 3 Meanwhile, warm a large skillet over medium-high. Pour in 50 ml olive oil and crush 1 clove garlic lightly; fry garlic until golden.
- 4 Toss bread cubes in skillet. Stir, let cubes toast golden all around, adding more oil if they stick. Sprinkle salt.
- 5 Remove garlic cloves. Mince soft garlic finely. In a big bowl combine minced garlic, white balsamic vinegar, honey, remaining olive oil.
- 6 Add roasted tomatoes, white beans, sprinkle fresh thyme leaves, season with salt and pepper. Toss to blend flavors.
- 7 Just before serving, fold in arugula, crispy pancetta, toasted bread cubes. Adjust salt pepper. Dollop ricotta on top if wanted.
Frequently Asked Questions About Panzanella Salad Recipe
Can you make this panzanella without bacon? Yeah. Skip it. It’s still good. It’s a different salad but the bread and tomatoes and white beans are doing enough work. Try adding an extra tablespoon of olive oil to make up for the fat.
What’s the difference between this and a regular white bean salad? The bread. That’s literally it. Bread salad is a thing. Without the bread it’s just a mediterranean bean salad. Both are good. This one’s warmer because of the toasted bread.
Can you use canned tomatoes instead of fresh? No. Don’t. Canned tomatoes are cooked already and they’ll turn to soup. You need fresh ones you can roast until they collapse but stay mostly whole.

Can you substitute the white beans for something else? Chickpeas work. Kidney beans are too heavy. Lentils don’t fit the same way. Cannellini beans are the play here — they’re mild enough that the tomato and bread stay the main event.
