- Vegetable spread, to taste
- 8 leaves of romaine lettuce
- 3 ripe avocado, sliced

- 1 Preheat oven to 185 °C (365 °F).
- 2 In a bowl, whisk together the olive oil, apple cider vinegar, brown sugar, smoked paprika, and onion salt.
- 3 Dunk each tofu slice in the marinade. Place them on a lined baking sheet. Reserve some marinade.
- 4 Bake for 20 minutes. Brush the remaining marinade on the tofu slices.
- 5 Return to oven for another 10 minutes until crispy.
- For the sandwich
- 6 While tofu bakes, prepare the bread. Toast the whole grain bread slices until golden.
- 7 Spread vegetable spread on each slice of bread.
