Eight eggs. Feta cheese, crumbled. Not too much — two-thirds of a cup. A tablespoon of fresh dill. Salt and pepper. That’s actually it. Nine ingredients. Maybe ten if you count salt.

How to Make a Frittata With Vegetables

Oven rack goes to the top. Broiler on high. Do that first or you’ll forget.

Heat 20 ml of olive oil in a nine-inch nonstick skillet on medium. Pour the onion in with the garlic. Five minutes, stirring once or twice. You’re looking for them to go kind of translucent, soft, not brown. Pull them out into a bowl. Let them cool a second.

Same skillet. Don’t wash it. Add another 30 ml of oil. Spinach goes in. Zucchini. Stir gently. Four minutes. It collapses. That’s the whole point. The water comes out of the spinach and the zucchini just gets soft. Move it to a separate plate. Temperature of the pan matters more than you think.

How to Get This Eggs With Vegetables Crispy on Top

Crack the eight eggs. Beat them. Add the feta and dill and that cooled onion-garlic mixture. Season it. Actually taste it before it hits the pan. Salt changes everything.

Back on the skillet, medium heat. Pour the egg mixture in. Don’t touch it. Forty-five seconds. Just leave it alone. Your instinct will be to stir. Don’t.

Spread the spinach and zucchini over the top. Even distribution. Now the eggs cook for six to seven minutes. The edges start browning. The base sets. The center’s still a little soft. You can tell by looking, but if you’re not sure, jiggle the pan — it should move but not slosh.

Straight under the broiler. Seven minutes. Watch it. The top gets puffy and golden. No more jiggle. It’s done when it looks set and feels firm when you touch the center — carefully, it’s hot.

Out of the oven. Let it sit for a minute. Two minutes is better. Slice it. Serve warm or cold.

Frittata Vegetable Recipe Tips and What Goes Wrong

Spinach releases water. That’s fine. It makes the eggs taste like spinach, which is what you want. If it seems too wet, drain it after wilting. Just push it against the side of the pan.

Zucchini same thing. Shred it fine. The finer you shred it, the faster it cooks and the more it disappears into the eggs.

Don’t open the oven while the broiler’s going. You’ll let the heat out and it takes forever to come back. It’s done when the top looks done. Golden. Puffed. Trust it.

Temperature matters. Medium heat isn’t suggestion. Medium heat. Too high and the bottom burns before the eggs set. Too low and it takes forever and the eggs get rubbery by the time the broiler finishes.

Feta’s salty. Taste before you add salt. You might need less than you think, or none at all.

Ingredients
  • 1 medium onion, chopped finely
  • 2 cloves garlic, minced
  • 50 ml olive oil (about 3 tbsp)
  • 500 ml (2 cups) chopped fresh spinach, packed lightly
  • 250 ml (1 cup) shredded zucchini
  • 8 large eggs
  • 150 ml (2/3 cup) crumbled feta cheese

Method
  1. 1 Set oven rack to upper third position and preheat broiler to high.
  2. 2 Heat 20 ml olive oil in a 23 cm (9 inch) ovenproof nonstick skillet over medium heat.
  3. 3 Sauté onions and garlic until translucent and soft, about 5 minutes; remove to bowl and cool slightly.
  4. 4 In the same skillet, add remaining 30 ml olive oil then toss in spinach and zucchini. Cook stirring gently until wilted and soft, around 4 minutes; transfer to separate plate.
  5. 5 Beat eggs with feta and dill in the bowl with onion mixture; season with salt and pepper.
  6. 6 Return skillet to medium heat; pour egg mixture in, let settle without stirring for 45 seconds.
  7. 7 Distribute spinach and zucchini evenly over the eggs.
  8. 8 Cook gently for 6 to 7 minutes or until edges start browning and base is mostly set but center still slightly soft.
  9. 9 Place skillet under broiler for about 7 minutes until frittata is puffed, golden on top, and no longer jiggly.
  10. 10 Remove and allow to cool briefly before slicing.

Frequently Asked Questions About Eggs With Vegetables

Can I add other vegetables to this egg and vegetable recipe? Yeah. Mushroom and eggs work great. Cabbage egg too. How do you know when the frittata is done under the broiler? Puffed up. Golden on top. Jiggle the pan — no movement in the center. When you touch the middle, it should feel set. Still warm from being under the heat, but not liquid. That’s it.

What’s the difference between a frittata and an omelet? Frittata you start on the stovetop and finish under the broiler. Omelet you keep on the stovetop and fold it. Frittata’s easier. You don’t have to flip anything.
