Watch it go soft. Should take about ten minutes. The rhubarb falls apart when it’s done, not crisp anymore, kind of dissolved at the edges.
Turn off the heat. This part matters. Stir in the rose hips while it’s still hot but not boiling. Cover the pot with a lid. Let it sit fifteen minutes. The rose hips steep in there and the whole thing goes dark pink, almost red. You’ll smell it—floral, tart, something ancient.
