Ghee. Not butter. Burns differently, tastes richer. About 2.5 tablespoons.

One medium onion, chopped. Carrot, small, diced fine. Matters less than the onion but adds sweetness that balances the tang.

Two garlic cloves. Minced. Not sliced. Spreads better through the oil.

Turmeric powder — just under a teaspoon. Less than you’d think. Too much tastes medicinal.

Fresh ginger, grated. About a tablespoon. The dried stuff doesn’t work here. Tried it.

Red lentils. 200 milliliters, which is roughly three-quarters of a cup if you’re eyeballing it. They break down into the soup instead of staying whole. That’s the point.

Vegetable broth. 5.5 cups. Any kind works. I use the low-sodium stuff because you’re adding salt anyway.

Coconut milk. Slightly over a cup. Not the light version. You need the fat.

Tamarind paste. 25 milliliters — about a tablespoon and a half. This is what makes it taste Indian instead of just creamy. Found it at the regular grocery store in the international aisle. If it’s not there, look online. Don’t skip it.

Salt and black pepper. Lime, half of one. Fresh cilantro for the top.

How to Make Indian Red Lentil Soup with Ghee

Set the pot to medium. Pour in the ghee and let it warm up — not smoking, just hot. Add the onion, garlic, and carrot. Stir them around. They’re going to go soft and kind of translucent. Takes about seven minutes. You’ll know it’s ready when the onion stops being sharp and starts being sweet.

Stir in the turmeric and ginger now. Cook for maybe 90 seconds. This is where it smells incredible — don’t walk away, just stand there for a second and breathe. If it starts browning too fast, it’s burning. Lower the heat a tiny bit.

Pour everything in — the broth, coconut milk, tamarind. Stir it around. Bring it to a rolling boil. You want actual bubbles breaking the surface, not just steam.

Dump the lentils in. Stir once. Lower the heat all the way down and partially cover it with a lid. Not fully covered — you want some steam to escape. Let it sit for 25 minutes. Stir occasionally. Every five minutes or so. The lentils are going to go from looking like little pebbles to kind of dissolving into the soup. That’s right. That’s what should happen.

The color goes from bright orange to kind of a peachy brown. When the lentils are soft all the way through and the soup is thick — and I mean actually thick, not watery — that’s done.

Getting the Texture Right for Red Lentil Soup with Coconut Milk

This is where people mess it up. They want it to look like broth. It’s not broth. It’s supposed to be creamy and a little heavy.

If it’s too thin after 25 minutes, keep the heat on. Lentils break down and thicken as they sit. Give it another few minutes. If it’s still watery, the lentils aren’t done yet — just cooked through. Let it go. The breakdown happens fast once they’re actually soft.

Taste it before you serve it. Salt it now. Then taste again. Lime juice after salt — the acid brightens everything. Add half a lime’s juice and stir. Tastes completely different. Better.

Cilantro goes on top. Fresh. Not cooked into it. It’s a garnish because it matters there. The texture, the smell — cilantro does different things depending on where you use it.

Indian Lentil Soup Tips and What Goes Wrong

White lentils or brown ones won’t work the same way. Red ones dissolve. That’s why they’re in this.

Tamarind paste has a smell you either know or you don’t. It’s sour and a little funky and it’s supposed to be. If you open it and it’s off, that’s just what tamarind smells like. Not spoiled.

Coconut milk — shake the can first. It separates. Top layer is all fat, bottom is all liquid. You want both mixed in.

Frequently Asked Questions About Indian Red Lentil Soup

Can I make vegetarian lentil soup without ghee? Coconut oil works. Olive oil works if you use less and don’t let it get too hot. Butter burns. Ghee doesn’t, which is why it’s better. But yeah, the soup still comes together without it.

How long does this red lentil soup keep? Five days in the fridge, maybe six. Freezes fine. I freeze it flat in a bag and it defrosts in about an hour on the counter. Tastes the same.
