Mix the soy, brown sugar, and star anise in a bowl. That’s it. Pour it over the pork belly in something sealable. Press it down so the marinade touches everything. Cover it. Stick it in the fridge overnight minimum. Eight hours at least. Flip it if you remember. Doesn’t matter that much.
Next morning, drain it. Toss the old marinade — you’re making fresh sauce in the pan later. Preheat the oven to 175°C. Mid-level rack.

- Pork Belly
- 160 ml soy sauce dark or regular
- 40 ml brown sugar
- 10 ml ground star anise
- 875 g fresh pork belly
- 7 green onions halved
- 700 ml low-sodium chicken broth
- Buns and Toppings
- 14 small steamed buns warm
- Plum sauce to taste
- 3/4 cucumber English unpeeled sliced thin
- 3 green onions sliced
- Fresh coriander leaves to taste

- Pork Belly
- 1 Mix soy sauce, brown sugar, star anise in a small bowl. Put pork belly in a sealable container. Pour marinade over pork. Coat well. Cover and refrigerate overnight or at least 8 hours, flipping meat if possible. Drain pork, discard marinade.
- 2 Preheat oven to 175 °C (around 347 °F). Place oven rack mid-level.
- 3 Heat a nonstick ovenproof pot without oil. Dry cook green onions until blackened, 4-6 minutes. Add chicken broth and pork belly. Bring to boil.
- 4 Cover pot. Bake 2 hours or until pork is tender and easy to pull apart, turning halfway through. Remove pork, let cool on plate 30 minutes then refrigerate 1 hour. Strain cooking liquid, discard onions, keep liquid.

Can I use a different cut of pork? Technically yes. Shoulder works. It won’t have the same texture though — belly’s fatty, gets kind of silky when you braise it. That’s what you want. Shoulder gets stringy.
How long does the pork belly bao bun keep? Three, four days in the fridge. The pork gets drier the longer it sits but the sauce helps. Buns go stale after a day so make those fresh or don’t bake them yet.
What if I can’t find the small steamed buns? You need them or this falls apart. Check the freezer section. Asian markets have them. The kong bak bao needs that specific bun texture — soft, pillowy. Dinner rolls don’t work. Regular bread doesn’t work.
